Ex-dairy beef comes from cows that have previously been used for milk production. Once their dairy career ends, they're moved to pasture to rest and feed naturally on grass. This extended lifespan — typically 5+ years vs 20-30 months for conventional beef cattle — produces beef with a deeper, more complex flavour and distinctive golden fat.
The extended age and pasture-based diet produce a unique flavour profile — more intense, umami-rich and complex than standard grass-fed beef. The golden yellow fat is a hallmark of animals that have been feeding on fresh grass for years, and it melts beautifully during cooking, basting the meat with a richness you simply can't replicate in younger cattle.
Bring to room temperature for 45 minutes. Season generously with sea salt only — the flavour is already exceptional. Sear in a very hot cast iron pan with beef dripping — 3-4 minutes per side for medium-rare. Finish in the oven at 180°C for 6-8 minutes if needed. Rest for at least 8 minutes before carving off the bone and slicing against the grain.
