Unlike conventional beef, ex-dairy cattle develop a unique texture and intensely rich, umami-packed flavour thanks to their extended lifespan. Each animal is always over 5 years old and spends a minimum of 12 months retired on pasture, grazing naturally on a grass-fed diet.

Ex-dairy ribeye comes from cows that have previously been used for milk production. After their dairy career ends, they're moved to pasture to rest and graze naturally on grass. This extended lifespan — typically 5+ years — produces a ribeye with a deeper, more complex flavour and distinctive golden fat that you simply won't find in younger beef.
Both come from grass-fed native British cattle, but the key difference is age. Standard grass-fed ribeye comes from cattle typically 20-30 months old. Our ex-dairy ribeye comes from cattle aged 5+ years, producing a firmer texture, more intense umami flavour, and a distinctive golden fat. It's a completely different eating experience — bolder, richer, more complex.
Bring to room temperature for 30-45 minutes. Season generously with sea salt — the flavour needs nothing else. Sear in a very hot cast iron pan with beef dripping — 2-3 minutes per side for medium-rare. Render the fat cap on its side briefly. Rest for at least 5 minutes. Don't overcook — medium-rare showcases the aged flavour best.
