Tasting notes
Spicy aroma reminiscent of ripe fruits such as pineapple and mango, ginger and cinnamon. Herbal floral notes such as chamomile and sweet notes like maple syrup. The wine has a slight sweetness, mild acidity and fine tannins. Both the nose and palate are voluminous and complex. The rich aromas and fruitiness linger on the palate with the tannins.

Food pairing
Twice-cooked pork (Hui Guo Rou), sweet and sour pork, deep-fried spring roll, Tonkatsu (deep-fried pork cutlet), Chicken Nanban (deep-fried chicken with vinegar and tartar sauce), blue cheese. It can be enjoyed as an aperitif or after-dinner drink.

Winemaking
Made from late-harvested (mid- to late-October) 4-11 year-old Sauvignon Blanc vines planted on south-west-facing slopes on a limestone karst plateau at 400 metres altitude. Fermentation in stainless steel tanks without destemming and crushing, with 14 days of maceration. After fermentation, the wine was transferred to 6-year-old barrels for 5 months' ageing. Only 15 ppm sulphite added at bottling.

domaine tetta's theme for the 2022 vintage was ‘late harvest’. By pulling the harvest to its limits and changing to a vinification that also utilises the skins and seeds, the wines are completely different from the Sauvignon Blancs of the past. From this vintage onwards, the winemaker has moved to a skin-based production, not only for Sauvignon Blanc, but also for many white varieties. The response has been solid, but they feel that in the future it will be necessary to determine when to harvest and how to macerate the grapes in order to clarify the individuality of the varieties. This wine represents a new style of domine tetta.
