Translated as "secret" and taken from a thin, fatty muscle in the shoulder, the Secreto has a likeness to our much-loved bavette steak and delivers an incredibly rich, buttery bite when cooked to a well-rested medium. Quick to prepare and packed with character — a cut every serious meat lover should experience.

Secreto means "secret" in Spanish — named because this hidden muscle in the shoulder of the Iberian pig was traditionally kept by butchers for themselves. It's a thin, flat, heavily marbled cut similar in shape to bavette. The extraordinary intramuscular fat from the Iberico breed makes it one of the most flavoursome pork cuts available anywhere.
Hot and fast — exactly like bavette steak. Bring to room temperature for 20 minutes. Season with sea salt. Sear over very hot coals or in a cast iron pan — 2-3 minutes per side for medium. The fat renders almost instantly. Rest for 5 minutes — essential. Slice against the grain in thin, angled slices. Don't overcook — medium (slightly pink) is ideal.
