Bavette is best cooked quickly and served medium-rare, allowing its natural texture and flavour to shine. It also takes on marinades particularly well, making it a standout choice for barbecuing or searing hot on the grill.

Order before 11am Tuesday to Friday for next-day delivery across the UK. Cut fresh in-house, vacuum-packed and shipped in insulated packaging with ice packs.
Hot and fast. Bring to room temperature for 20-30 minutes. Season with sea salt. Sear in a very hot pan or over direct flame — 2-3 minutes per side for medium-rare. Rest for at least 5 minutes — essential for bavette. Always slice against the grain in thin, angled slices. Don't overcook — bavette toughens quickly past medium.
Bavette's loose grain soaks up marinades beautifully. Chimichurri is the classic pairing — the fresh herbs and acidity complement the richness of Spanish Angus perfectly. Soy, ginger and garlic also works brilliantly. Marinate for 2-6 hours in the fridge. Pat dry before cooking to ensure a proper sear.
