Baking Glycerine is a colourless, odourless, syrupy liquid often used to retain moisture and add sweetness to foods. It also helps oil and water-based ingredients combine together better.
Glycerine helps prevent ice crystals forming in frozen foods such as icecream, prevents sugar crystallization in foods like candy. It also can be stirred into royal icing to restore consistency or use to soften fondant, gumpaste.
Glycerine is used to add moisture, stretch and pliability to fondant and gumpaste, without causing it to be sticky. Knead through add a small amount at a time and work it in well until you gain the desired consistency.
Vegetable glycerine is made by heating triglyceride-rich vegetable fats — such as palm, soy and coconut oils. It is free from gluten and suitable for ceoliacs and vegans.
Glycerine is widely used in the food industry, but also in the pharmaceutical, cosmetic and craft (candle, soap) industries.
