Sourced from a few parcels, about half barrel-fermented for texture, then blended late in harvest and cooled before being kicked into bottle with a happy, active ferment. Always a nervous wait to see if there’s a fizz, but this year behaved beautifully. The bubbles are fine and integrated—serve icy cold and drink with gusto.
