Terroir
From the village of Santenay at the southern end of the Côte de Beaune, Clos des Hâtes is a well-situated site known for producing wines of both structure and charm. The vineyard is defined by limestone-dominant soils with clay influences, providing a balance of drainage and water retention that supports even ripening. Its favorable exposure ensures ample sunlight, while the slightly cooler positioning of Santenay helps preserve acidity and aromatic freshness. The result is a Pinot Noir that captures both the rustic energy and emerging refinement of this appellation.
Winemaking & Technical Notes
Crafted from 100% Pinot Noir, the fruit is hand-harvested and carefully sorted. Fermentation is carried out with attention to preserving purity and site expression, often incorporating a thoughtful proportion of whole clusters to enhance aromatic lift and structure. Extraction is gentle, favoring elegance over power. The wine is aged in French oak barrels, with a restrained use of new oak to avoid masking the vineyard character. The élevage is designed to refine tannins and integrate the wine’s components while maintaining vibrancy.
Tasting Notes
Medium ruby in the glass, this wine offers an inviting nose of red cherry, cranberry, and wild strawberry, accented by notes of violet, crushed herbs, and a touch of earth. On the palate, it is lively and balanced, with bright acidity and finely textured tannins supporting a core of fresh red fruit. Subtle mineral undertones add dimension, leading to a clean, energetic finish with a gently savory edge.
Food Pairing & Service
Versatile at the table, this Santenay pairs well with roasted poultry, grilled pork, or dishes featuring mushrooms and root vegetables. It also complements charcuterie and semi-soft cheeses. Serve slightly below room temperature to highlight its freshness and lift. A short decant of 20–30 minutes can help open up its aromatics, particularly in its youth.
Cellaring Potential
Enjoyable upon release for its brightness and approachability, this wine will continue to develop over the next 7 to 10 years. With time, it will gain additional complexity, with fruit notes evolving toward dried red berries alongside more pronounced earthy and savory characteristics.
