Domaine Paul Cherrier is based in Sancerre, in France’s eastern Loire Valley, where Sauvignon Blanc finds one of its most precise and terroir-driven expressions. The vineyards are planted across classic Sancerre soils, including limestone, clay-limestone, and silex, each contributing distinct texture and mineral character to the wine. The region’s cool continental climate, moderated by the Loire River, encourages slow, even ripening and preserves the grape’s hallmark acidity and aromatic purity.
The 2023 vintage offered balanced conditions, allowing Sauvignon Blanc to achieve excellent flavor development while retaining freshness. The resulting wine reflects both vintage clarity and the understated elegance for which the domaine is known.
Winemaking & Technical Notes
This Sancerre is produced from 100% Sauvignon Blanc, harvested at optimal ripeness to capture freshness and site expression. Fermentation takes place primarily in temperature-controlled stainless steel, emphasizing purity of fruit and aromatic precision. The wine is aged on fine lees for a short period to add texture and depth without introducing overt richness or oak influence.
Paul Cherrier’s approach favors minimal intervention, allowing terroir and varietal character to lead. The result is a refined, classic Sancerre that balances energy, structure, and minerality with clarity and restraint.
Tasting Notes
The 2023 Sancerre opens with a lifted, elegant aromatic profile. Fresh citrus, green apple, and white peach are complemented by notes of crushed stone, fresh herbs, and a subtle floral nuance. The nose is clean and precise, offering immediate appeal without excess intensity.
On the palate, the wine is crisp and finely textured, driven by bright acidity and mineral tension. Flavors of lemon zest, pear, and grapefruit unfold across the mid-palate, supported by a saline edge and a stony backbone that reflects the limestone soils. The mouthfeel is focused and linear, with excellent balance between fruit and structure.
The finish is long and refreshing, lingering with citrus, minerality, and a faint herbal note that invites another sip.
